A few years ago, my cousin introduced me to this concept of a ‘foil boil’. We enjoyed a bunch of yummy seafood and sausage in a delicious cajun sauce in a big foil container and cooked it over the grill. It was divine! I’ve changed up this recipe a few times but this is the ‘base’ that I typically follow. The seafood may change as I’ve done this recipe with mussels or clams, chicken thighs, or different types of sausage and it always comes out great. You can really play around with it!
Ingredients:
1 lb raw shrimp, thawed
1 lb sausage
1 bag of small potatoes
6 ears of corn, halved
2 lemons
3 tablespoons cajun seasoning
3 tablespoons fresh parsley
3 tablespoons of extra virgin olive oil
1/4 cup of water
2 lemons, halved
salt and pepper as desired
Directions:
1. Preheat the oven to 400 degrees.
2. In a large baking dish, spray with non stick spray (I used avocado oil) then place the small potatoes in. Sprinkle with salt and pepper.
3. Next, add the sausage,shrimp, and corn. Sprinkle the cajun seasoning, fresh parsley, salt and pepper onto the food. Add 1/4 cup of water to the pan (towards the bottom as much as possible). Squeeze the lemons on top and then place them in with the rest of the boil.
4. Cover and bake in a preheated oven for 45 minutes or until everything is cooked through.
Optional: Broil for a few minutes once you’ve finished cooking the boil. Add additional lemon, hot sauce or other desired seasoning.
