Infamous Peanut Butter Cookies



1 cup chunky peanut or almond butter
1 egg
½ cup brown sugar
1 tsp vanilla
1 tsp baking soda
1 cup chocolate chips (Enjoy Life is soy, dairy, and gluten free)


  1. Preheat oven to 350
  2. In a large mixing bowl, combine peanut butter, egg, brown sugar, vanilla, and baking soda until well blended.
  3. Add chocolate chips until well combined.
  4. On an ungreased cookie sheet, drop heaping tablespoon size balls 1-2 inches apart.
  5. Bake for 10-12 minutes. Let cool for 5 minutes before removing from cookie sheet.


Add ½ cup brown rice crisp cereal for an extra crunch.

Add ½ cup unsweetened coconut or ¼ cup unsweetened cocoa powder.
