1 cup chunky peanut or almond butter
½ cup brown sugar
1 tsp vanilla
1 tsp baking soda
1 cup chocolate chips (Enjoy Life is soy, dairy, and gluten free)
- Preheat oven to 350
- In a large mixing bowl, combine peanut butter, egg, brown sugar, vanilla, and baking soda until well blended.
- Add chocolate chips until well combined.
- On an ungreased cookie sheet, drop heaping tablespoon size balls 1-2 inches apart.
- Bake for 10-12 minutes. Let cool for 5 minutes before removing from cookie sheet.
Add ½ cup brown rice crisp cereal for an extra crunch.
Add ½ cup unsweetened coconut or ¼ cup unsweetened cocoa powder.
