Mexican Quinoa

IMG_2009I’m such a huge fan of Mexican food but not a fan of the way it often makes me feel. The heaviness of the rice and beans can be a bit much at times. This is such a light way to enjoy the savory flavors of a Mexican dish. Quinoa is a power food, super food, can’t-get-enough of this goodness-food that will easily get you your protein for the day. I’ve added black beans to this dish but you can certainly add a bean of your choice or skip the beans all together if that becomes too heavy for you. I’ve also been experimenting with making my own salsa, pico de gallo, what have you. The fresher, the better! Included is my taco seasoning recipe. This is great because you can make it and keep it in your pantry for that next Mexican craving. I’ve enjoyed this simple taco seasoning because it is SO full of flavor without all the additives that the pre-made, package seasoning has in it. Enjoy this tasty Mexcian Quinoa without the belly ache!

Ingredients:
1 ½ cups quinoa
3 cups chicken stock
1 tablespoon taco seasoning (see below)
1 cup cooked black beans (approx. 1 can)
1 ripe avocado, cubed
2 cups shredded lettuce (approx. 1 head)
1 red onion, sliced
1 green pepper, sliced
1 red pepper, sliced
Salsa or pico de gallo
Coconut oil for sautéing

Taco Seasoning
½ cup chili powder
¼ cup onion powder
2 tablespoons cumin
2 tablespoons garlic powder
2 tablespoons sea salt
1 tablespoon paprika
1 tablespoon black pepper

Mix all together and store in an airtight container in the pantry up to three months.

Directions:
1. Bring the chicken stock to a boil and add the quinoa and cover. Cook for 15 minutes or until all the water has been absorbed and the quinoa can be fluffed with a fork.
2. Meanwhile, in a skillet, sauté peppers and onions in coconut oil. Sprinkle with salt and pepper. Set aside.
3. Once the quinoa is done, add 1 tablespoon of the taco seasoning and gently combine. Add the black beans and peppers and onions.
4. If you’d like to serve right in the skillet, add the lettuce followed by the avocado and salsa. If serving in bowls, build your own quinoa bowl by adding the toppings as you wish!
