Perfect Chicken and Crisp Salad

This recipe is a great way to use up leftover chicken! This recipe is super simple gives you all the
2 cooked chicken breasts cut into strips
1 head romaine lettuce
1 baby cucumber
handful of baby carrots chopped
1/4 sliced red onion
topped with balsamic dressing (see recipe below)

Feel free to add any other salad fix-in’s you like!

Balsamic Dressing
1 cup extra virgin olive oil
1/2 cup balsamic vinegar
1 clove crushed garlic
1 tsp Dijon mustard
1/4 tsp salt
1/4 tsp pepper
1/4 tsp dried parsley

1.Combine all ingredients except olive oil into a blender or food processor until blended.
2. Slowly add olive oil.
3. Serve and enjoy!

This dressing lasts in the refrigerator up to 10 days in a tightly sealed container.
